
Myrtle Gin
A clean fresh citrus gin with a warm aftertaste

Key Botanicals:
Lemon and lime rind
Lemon and aniseed myrtle
Pink peppercorns
Tasting Notes
Lemon and lime zest give a rounded mouth feel while the lemon myrtle adds aroma and additional citrus notes.
Coriander and cardamom compliment the citrus
Orris and angelica root give some grounded depth
Cassia bark and liquorice root add some earthy balance
Aniseed myrtle and pink peppercorn give warmth to the back palate

30ml Mallee Spirit Myrtle gin
90ml Bickford’s Dry tonic
I like the simplicity of the Bickford’s tonic
As a distiller, I spent so much time making the gin flavoursome - it don’t want to confuse it with a complex tonic (see my blog on tonic water)
Pour over a large block of ice and garnish with either a slice of fresh lemon or lime

30ml Mallee Spirit Myrtle gin
90ml Bickford’s Ginger Ale
Pour over a large block of ice and garnish with fresh lime and mint leaves
Cocktails
Tom Collins
60ml Mallee Spirit Myrtle Gin
30ml lemon juice
30ml simple syrup
Soda water to finish
Super refreshing
I like to use the cocktail shaker to ensure the drink is mixed and chilled
Put gin, lemon juice and simple syrup into a shaker with ice
Shake for as long as you want or until the shaker becomes frosted
Strain into a long glass filled half way with ice, top with soda and garnish with a slice
of lemon

45ml Mallee Spirit Myrtle Gin
45ml Mallee Spirit Lemoncello
30ml lemon juice
30ml simple syrup
1/2 an egg white - now if you are lucky enough to have your own chooks - you know
that nothing (other than a Kitchen Aid Mixer) will allow you to select half and egg white. That’s when you pretend you have friends and double the quantity - OR use afew drops of Wonderfoam (available on line from Only Bitters) or Aquafaba (available online from Aquafab). Place all ingredients into a cocktail shaker filled with ice
Shake like crazy Strain into a beaker, discard the ice and then return to the cocktail shaker and shake like crazy again Strain into a sweet little glass and garnish with a few twists of lemon rind
