
Strawberry Gin

Made using a base gin with the addition of lavender, carefully selected strawberries are then infused in the gin for 2 months imparting colour, flavour and a touch of sweetness
The colour and flavour in the bottle is all natural (unlike many commercial “pink gins”). Being a natural colour, it will slowly fade if the bottle is exposed to light. The flavour wont change but it will loose some of its “pink”. Best keep this bottle in a dark cupboard or freezer – if it lasts
Of note the strawberry gin can only be made in the early strawberry season (November to April). We found using strawberries towards the end of the season the fruit has less flavour and colour and simply does not create the delicious flavours we want.
Designed for those who prefer a sweeter style drink, the strawberry gin is best paired with a good lemonade
30ml Mallee Spirit Strawberry Gin
90ml Capi lemonade
Lots of ice
Garnish with a few slices of fresh strawberries and mint
Strawberry gin is also a great base for delicious, sweet cocktails

45ml Mallee Spirit Strawberry gin
45ml Mallee Spirit Lemoncello
30ml Strawberry syrup - I make the strawberry syrup by boiling up a cup of sugar, a cup of water and a punnet of chopped strawberries. As this has no preservatives, it is best kept frozen.
1/2 an egg white - now if you are lucky enough to have your own chooks - you know that nothing will allow you to select half and egg white.
That’s when you pretend you have friends and double the quantity - OR use a few drops of Wonderfoam (available on line from Only Bitters) or Aquafaba (available online from Aquafab). See my blog on cocktail foamers for more information!
Place all ingredients into a cocktail shaker filled with ice
Shake like crazy Strain into a beaker, discard the ice and then return to the cocktail shaker and shake like crazy again
Strain into a sweet little glass and garnish with some finely sliced strawberry – if they are sliced too thick, they will just sink to the bottom of the glass
